Delicious, yet very simple recipes

At Fun & Healthy Weight Loss Center we carry an extensive assortment of Redmond's Real Salt Products as well as huge variety of Walden Farm Products (Syrups, Dressings, Seafood & Pasta Sauces, Mayos, BBQ Sauces, etc.) which are all Calorie Free, Carb Free, Fat Free, Sugar Free & Gluten Free.  These are great for turning your favorite dishes into healthy meals.

We are always available for tips & ideas of how to cook healthier meals for you and your family.

One thing to keep in mind is that grilling your meats on an open flame or on a George Forman grill keeps the fats away from the food.  Steam your vegetables or saute them in water...not oil!   Steam red cabbage, zucchini, cauliflower, broccoli or asparagus to bring out their best flavor.  Use the Redmond's Real Salt or Organic Seasoning Salt to season.  Pretty soon you will find that you are adding more and more vegetables to your diet.  Do not be afraid to try new things!!!!

Waffles

A great way to start your day.  Beat 2 egg whites in a small bowl.  Add one packet of Fun & Healthy Pudding (your choice).  Add a dash of organic cinnamon, 1/4 tsp. of baking powder and enough water (dash) to mix until it is the consistency of peanut butter.  Scrape the contents with a spatula onto a heated Belgian waffle maker and cook for approximately 4 minutes.  (we use an organic nonstick cooking spray on the waffle iron).  Serve with your choice of Walden Farms syrup which we carry at Fun & Healthy.

Bison (or turkey) meatloaf

"A Dieter Favorite" 

1 to 1 1-1/2 Lbs. of lean ground protein (bison, turkey, etc.) 

1 to 2 eggs, beaten 

1 head of cauliflower, steamed & mashed 

2 chopped green peppers 

2 chopped leaks 

Black pepper & Redmond’s Seasoning salt, to taste 

½ cup Walden Farms Tomato Basil Sauce or BBQ Sauce   

Mix ingredients except the sauce. Put in meatloaf pan. Top with ¼-1/2 cup of Walden Farms Tomato Basil Sauce or BBQ Sauce 

Bake at 375 for 75 minutes.  

Roasted Veggies

Roasting your favorite vegetables is easy with our Walden Farms Garlic & Herb Sauce.  Simply toss in a small amount of the sauce (zero calories, carbs, fats & sugar) and roast at 450 for 45 minutes or until done.  Here we have pictured Radishes.  When you roast them, they take on a whole new flavor and will remind you of new potatoes...without all of the carbs!

Egg Salad

Super easy!  Hollow out hard boiled eggs that have been cut in half.  Mix the yolk with Walden Farms Honey Mustard Mayo, Chopped Dill Pickles, a litte Dill Pickle Juice.  Stir well and add Redmond's sea salt to taste.  With a spoon fill the egg whites and top with paprika.  Voila...your grandmother's hard boiled eggs (just healthier).

Fettuccini & Steamed Vegetables

Quick lunch or dinner.

Take a steamer bag of vegetables (we like cauliflower & broccoli).  Cook in microwave according to directions.  Meanwhile take a microwave safe bowl.  Add one packet of the Fun & Healthy Fettuccine Alfredo or the Creamy Chicken Pasta.  Add 7-8 oz. of water (we like to use boiling water, but this is optional).  Stir and cook for 3 minutes in the microwave.  Let it sit for one minute and fold in the cooked vegetables.  Very satisfying!!!!!!!!

Salmon & Scallops Salad

Simply put your seafood (we like salmon & scallops) onto a broiler pan.  Sprinkle with Redmond's Organic Seasoning Salt (available at Fun & Healthy).  Broil until done.  Place on a bed of your favorite greens.  We like crispy romaine and red cabbage.  Toss with our Fun & Healthy Salad dressing (see below for recipe)

Fun & Healthy Salad Dressing

Here is our favorite salad dressing!  Mix White House Organic Unfiltered Apple Cider Vinegar with the "mother" with Grape Seed Oil or Extra Virgin Olive Oil.  Add your favorite herbs and lemon, if you wish.  Add Clear Sweet Leaf Stevia, available at Fun & Healthy.  Try 2/3 oil to 1/3 Vinegar.  

Mashed Cauliflower

Steam and mash a head of cauliflower.  Add Redmond's Real Sea Salt.  Try adding Redmond's Garlic, Onion or Seasoning salt to taste.  Simple and is great when you need "comfort foods".

Coleslaw

A summertime favorite!

Chop red cabbage and add Walden Farms Coleslaw dressing and Redmond's Real Sea Salt.  Refrigerate before serving.

Mediterranean Turkey Burger

A great way hide your veggies!!!


Put ground turkey into a mixing bowl.  Add finely chopped vegetables such as mushrooms, green peppers, spinach, red cabbage.  Mix well and add Redmond's Organic Seasoning salt.  Make into 1/4 pound patties and grill outside or inside on your George Foreman grill.  Serve with Walden Farms Ketchup or Walden Farms Russian Dressing.  Skip the bun and enjoy on a lettuce wrap with lettuce and tomato.

Porch Tenderloin

Pork tenderloin is so simple to cook.  Simply sprinkle with Redmond's Organic Seasoning salt and place in pre-heated oven at 350 degrees for approximately 30-35 minutes.  Turn and cook for an additional 15-20 minutes.  

For a delightful BBQ Pork - place cooked tenderloin (medium rare) into a slow cooker.  Mix a sauce of 3 parts Walden Farms BBQ Sauce (I like the Honey flavor), one part Walden Farms Pancake Syrup and one part Walden Farms Chocolate Syrup.  Pour over the meat and let simmer.  It will be so moist and tender that it will fall apart!

Saute Shrimp

Sooooo easy...Sooooo good!!!

Place shrimp in a saute pan and add a small amount of Walden Farms Garlic & Herb Sauce.  Heat and stir until cooked (do not overcook).  Season with Redmond's Organic Seasoning Salt. Top with scallions (optional) and try serving over a bed of steamed spinach.

Chicken Salad

Simple but delicious!  Perfect for the warm weather.  Take cooked white meat chicken and chop.  Add chopped celery and onion (optional).  Stir in Walden Farms Pomegranate Mayo and season with Redmond's Organic Seasoning salt.  Chill.  Serve over a bed of fresh greens or salad.  

Mashed Turnips

This is great when you are craving comfort foods.  Simply take turnip heads, peel, quarter and boil until soft.  Drain, mash and add Redmond's salt and black pepper to taste.  

Steamed Red Cabbage

Did you know that red cabbage is excellent for your skin?  And, it taste great.  Steam and sprinkle Redmond's Real Salt.  (Pictured:  Steamed red cabbage, mashed turnips and our meatloaf recipe made with elk).  

Cappuccino

Miss you Starbucks fix?  No more!!!  Simply froth our RTD Vanilla Drink.  Spoon it over a fresh cup of coffee and top with organic cinnamon.  Sweeten if you like with our liquid Sweet Leaf Stevia (we like the Vanilla or Clear).  How to froth???  Heat the RTD Vanilla in a microwave safe cup or bowl and whisk.  Or, you can purchase frothers.  

Chocolate Pudding Pie

Crush Biscotti in a food processor.  Add enough Walden Farms Chocolate Peanut Butter for the crust to stick together.  Prepare 7 packets of the Fun & Healthy Pudding (your choice) according to directions and chill.  Spread & press the Biscotti crust into a pie pan.  Using a spatula, spread the pudding mixture on top of the pie crust.  Chill and serve.  Makes 7-8 servings.
